Warmer weather is upon us and summertime is full of road trips, picnics, bike rides, and cook-outs. I am finding that my husband and I are always on the go, and I like to carry a healthy snack with me at all times! These granola bars are packed with whole grains, protein, and (if you dare) a hint of chocolately sweetness.
I must admit that I have a new-found obsession with granola bars; I find them to be the perfect snack. The granola bar aisle at the grocery store is ever expanding, but if you look closely they have ingredients that I can’t pronounce and enough sugar for a candy bar! I was surprised to find out how easy it is to make them at home, where you get to control the quality of ingredients as well as the tasty additions. I encourage you to use this as a basic recipe and add your favorite dried fruit, nuts, or chocolate as you desire!
I have been playing around with several varieties lately and cherry almond seemed to be a natural combination (my husband’s idea to add the chocolate chips). These homemade granola bars will be a great addition to your lunch box or picnic basket. I have been baking a batch at the beginning of the week and individually wrapping them in plastic wrap for easy access. Enjoy!
- 1 egg
- 1/4c. brown sugar
- 1/4 c. honey
- 8 tbsp unsalted butter, melted
- 1/2 tsp. ground cinnamon
- 1/2 tsp. vanilla extract
- 1/2 c. almond butter (or peanut butter if you prefer)
- 2 c. old fashioned oats
- 1/4 c. dried cherries, cut into small pieces
- 1/4 c. slivered almonds
- 1/4 c. chocolate chips (optional)
Preheat the oven to 350 degrees F. Spray a baking dish with cooking spray or for easy transfer line it with tin foil that overlaps the ends.
Beat the egg, brown sugar, almond butter, honey, cinnamon, and vanilla extract together. Once combined drizzle in melted butter. Stir in oats, dried cherries, almonds, and chocolate chips (if using).
Transfer to lined baking dish and smooth out with back of wooden spoon; the mixture will be sticky. I usually use 3/4 of a 9 x 13 baking dish and create a “wall” of tin foil by folding it over where I want the mixture to stop.
Place in oven for 15-18 minutes until golden brown on top. The chocolate chips will start looking oozy and melted and the edges of the granola bars will be browned. If possible chill 45 minutes to 1 hour before slicing. Slice into any granola bar shape you choose and individually wrap for a grab-n-go option. These granola bars will surely integrate themselves into your weekly snack rotation!
