White Chocolate Peppermint Pretzels

Welcome to day four of my Seven Days of Holiday Treats series! This may be a mouthful of a recipe name, but I assure you these little treats are small bursts of refreshing sweetness. This is a recipe that I dreamed up one day as I was craving the classic holiday flavor of peppermint. Peppermint and the holidays are synonymous, perhaps because white chocolate reminds us of snow.

This holiday treat also satisfies one of my favorite conundrums: sweet or salty. Fear not, you do not have to choose when you make these. You get the salty flavor of the pretzels combined with the sweetness of the white chocolate and the harmonious flavor of the peppermint. I like to dip only half the pretzel in this preparation, although just as easily you can cover the whole pretzel, because I like to exaggerate the opposite sweet/salty theme.

These chocolate peppermint pretzels would be great on a cookie tray or placed in a cute container as a gift. They not only look festive, but they are also delicious! And last, but not least, there are only three ingredients in this recipe!! (A great way to use up the few candy canes left on your Christmas tree)

Ingredients

  • Pretzels (Recommended: Square tile shape)
  • 1 c. white chocolate chips
  • 8-10 large candy canes, crushed (you can use a food processor or a rolling pin to smash; the smaller the better)

The first step is making a double boiler; this sounds complicated but I promise its not. Bring a couple inches of water to a simmer in a small saucepan. Place a larger bowl on top of the simmering water; you don’t want the bottom of the bowl to touch the water. Place the chocolate chips in the bowl and begin to melt.

Tip for melting white chocolate: if you stir too much it will cause the chocolate to seize up and crumble. Instead, wait for the chocolate chips to look shiny and then stir.

Place the candy cane “dust” in a small bowl. Dip the pretzels in the white chocolate half way and then press into the candy cane pieces. Place on a piece of parchment paper and allow the chocolate to set up. After 20-30 minutes the chocolate will cool and be ready to be placed in containers. Enjoy!
