Happy Valentines Day! I want to share a breakfast recipe that you can make for your sweetie this weekend to continue the valentines celebrations. Nothing says “I love you” like breakfast in bed. I have to admit I am VERY spoiled by my husband, who often makes me breakfast on the weekends. Waking up to the smell of freshly brewed coffee and the faint rustling of someone in the kitchen has to be the best way to start the day. It makes me feel pampered and loved. All I have to do is roll out of bed and reach for the cup of coffee that he just poured….bedhead and all.
I have made several variations of this breakfast casserole, mostly using the ingredients I have laying around. This is a basic recipe; feel free to customize it to suit your taste buds. If you have sausage in your refrigerator instead of turkey bacon, use it! If you have half and half instead of milk, go for it! Almost any veggie would be amazing in this dish. Whatever you choose, be warned…this recipe will be a big hit and there will be no leftovers!
- 8 oz frozen hash browns
- 1 c. shredded cheddar cheese
- 1 green bell pepper, diced
- 3-4 slices turkey bacon, chopped
- 6 eggs
- 1/2 c. milk (just eyeball it)
- 2-3 sprigs fresh thyme
- salt and pepper to taste
Preheat the oven to 350 degrees F.
Spread the hash browns in the casserole dish so you have an even layer. Sprinkle cheese next, then add the green bell pepper. Arrange the bacon evenly on top.
In a bowl combine eggs, milk, thyme leaves, and salt and pepper; scramble eggs with a whisk or fork. Pour the egg mixture over the bacon/veggie/cheese mixture in the casserole dish and place in the oven.
Bake for 40-50 minutes until the middle is firm. When you put a knife through the center it should come out clean. As you may notice in the picture above I wasn’t able to take a picture before we dove in….oops! Serve with fresh fruit, or toast, and DEFINITELY coffee! Enjoy with your sweetie in bed! <3
