For some reason saying “BLATs” is just as much fun as eating these sandwiches. BLAT. Makes me giggle every time.
BLAT stands for bacon, lettuce, avocado, and tomato sandwich. This is a self indulgent attempt to convince myself that BLTs can be healthy and thus eaten on a weekly basis. Obviously if you add avocados to something it automatically has an aura of health…right? Actually when I stopped and thought about my version BLTs, or BLATs in this case, there were way more positives that I originally thought.
No white bread here…whole grains only please! Spicy arugula and thick slices of tomatoes amp up the veggie content of the sandwich. Avocados contribute healthy fats and add an irresistible creamy texture. With all those healthy swaps it makes the two little pieces of bacon seem insignificant. In reality each component of the sandwich is so delicious that you want to celebrate every single flavor; when combined it hardly resembles the diner classic using 1/2 pound of bacon sandwiched between two pieces of soggy white bread, sad wilted lettuce, and tired tomatoes.
Added bonus: The sandwiches are ready in under 20 minutes which is perfect for a busy weeknight!
Ingredients (makes 2 sandwiches)
- 4 slices whole grain bread
- 4-6 slices applewood smoked bacon
- 1 tomato, sliced
- 1 c. baby arugula
- 1 avocado, sliced
- 1/2 lime (~1 tbsp juice)
- 2 tbsp mayonnaise
Begin by placing slices of bacon in a cold skillet; turn heat on medium.
Turn occasionally until golden brown; drain on plate lined with paper towel to soak up extra grease.
While the bacon is cooking slice the tomato and avocado. Slice a ripe avocado around the pit and separate the two halves. Carefully remove avocado pit with your knife and discard. Run a large spoon between the avocado flesh and the peel; turn onto the cutting board. Cut into large slices and sprinkle lightly with lime juice to prevent it from turning brown.
Toast bread to golden brown. Spread one slice of bread with 1 tbsp mayonnaise. Add a generous layer of arugula leaves. Top with tomato slices and bacon. Lastly, add a couple slices of the avocado and place other piece of bread on top.
Look at all of those colorful layers!
Slice on a diagonal…just because it looks prettier that way. Enjoy!
