Mango Banana Smoothie

Yesterday was Valentine’s Day, I have a long weekend from work, and the sun is shining! How was your Valentines day? What did you do to celebrate? I spent the evening with the two loves of my life: my husband and my dog. We made homemade paella, drank Spanish wine, and devoured a large serving of the wonderful dark chocolate brownies I made the other day…it was heaven.

My husband really spoiled me with the flowers this year.

He is very thoughtful and will occasionally bring me flowers “just because” which is one of the 1.4 million reasons I love him.

He knows how much I love having fresh flowers on the table and always picks beautiful bouquets.

This year he showered me with a huge bouquet of roses, spray roses, alstromeria, and greens that makes me smile every time I look at it. I feel very loved.

I try to be just as thoughtful and make him things that he enjoys. Since my strengths are really in the kitchen this often is expressed through food (he’s not complaining). He has been working very hard in the basement getting his shop up and running: sourcing cabinets, designing/executing/staining a wood countertop, and organizing. It looks great so far! I surprised him by whipping up one of our favorite smoothies for a quick snack.

Mango and banana were meant for each other. They are best friends in smoothies and one of my go-to combinations because I can keep frozen mango in the freezer at all times. I have shared my easy berry smoothie; this is one more great combination to keep on the list!

Ingredients (1 large smoothie)

  • 1 banana
  • 1 c. frozen mango
  • 1 c. (or so) almond milk

Peel banana and break into a couple pieces as you add it to the blender.

Pour in the frozen mangoes.

Next comes the almond milk.

Turn the blender to pulse mode and puree until completely smooth. If your puppy is anything like mine this will be the point that she runs upstairs far, far away from your blender making noise.

If your smoothie seems too thick add a splash or two of almond milk until it reaches the desired consistency.

Serve your smoothie in a pretty glass with a straw.

Sip and repeat. Great for a quick breakfast, snack, or a  healthy sweet treat! Enjoy!
