Avocado Caprese Sandwich


Tonight I worked late, and when I finally got home I was hangry. For those of you not familiar with this term, the formal definition is being so hungry you become angry. At least I think that’s the formal definition. Okay, I’m not sure if the word has actually made it into the dictionary yet…but if it did that would definitely be the definition. Blood-sugar-plummeting-I-need-to-eat-now kinda hungry. Thus, hangry. We’ve all been there.

I’m going to keep it short and sweet, but I am excited to share this 5 minute sandwich that totally hit the spot tonight. I’m slightly embarrassed to call this a recipe considering it is so quick and easy but, for lack of a better word, we will go with it! :) This sandwich is a twist on the traditional Caprese (tomato and fresh mozzarella) pairing, but amped up with ripe avocado and spicy arugula greens. Colorful, tasty, slightly messy, and exactly what I needed to refuel.

Sometimes you walk in the door and want dinner on the table in 10 minutes or less. Keep this recipe in mind for YOUR busy night!

Ingredients (per 2 sandwiches)

  • 4 slices bread, preferably whole grain
  • 1 ball fresh mozzarella, thinly sliced
  • 1 medium tomato, thinly sliced
  • 1/4 c. prepared pesto
  • 1 c. baby arugula
  • 1 avocado, sliced


Spread a thin layer of pesto on the bottom slice of bread.


Add 1/2 c. arugula on top of the pesto; this will help the greens adhere and stay in place.


Next add a layer of fresh mozzarella, about 2-3 slices.


Add 2 tomato slices on top of the mozzarella.


Finally arrange several slices of avocado and top with the other slice of bread.




The avocado lends a creamy texture and definitely takes the tomato/mozzarella combo to the next level. Enjoy!
